gluten free sage stuffing serves 6 prep time: 30 mins cooking time: 40 mins
6 cups stale cubed gluten free bread (i used local san diego brand johann’s) 2 tbsp olive oil 1 medium yellow onion, diced 6 celery stalks (leaves included), sliced 1 head fennel, diced ½ tsp garlic powder ½ tsp onion powder sea salt black pepper 10 sage leaves, thinly sliced leaves from 4 stalks of thyme 1 tsp vegetable bouillon base ¾ cup vegetable broth ¾ cup hemp milk 3 eggs
1. in a skillet, warm olive oil + add in onion, celery, fennel, garlic powder, onion powder + few pinches of sea salt. start sauteing down till almost translucent (10 mins) 2. add in sage, thyme + vegetable bouillon. cook for another 5 mins, then remove from heat 3. preheat oven to 350 degrees 4. in a small bowl, add vegetable broth, hemp milk, eggs, few pinches sea salt + black pepper. beat well 5. place bread in a large mixing bowl + pour broth mixture over. toss gently till all bread is covered. fold in onion mixture + toss gently to mix well 6. spread in a lightly greased 2 quart casserole dish + drizzle with a little more olive oil  7. cook covered at 350 for 30 mins, then uncover + cook at 400 degrees for last 10 mins. stuffing should be golden brown on top. if necessary, cook for additional 5 mins or until desired coloring

fluffy greek yogurt mashed potatoes prep time: 5 mins cooking time: 20 mins serves: 4
4 medium russet potatoes, cut in quarters sea salt 3 tbsp butter or olive oil 1 cup greek yogurt ½ cup hemp milk black pepper green onion (optional)
1. put potatoes in a large pot + add 1 tsp sea salt. cover with cold water 2. bring water to a boil over medium-heat + cook till potatoes are tender (~15 mins) 3. drain potatoes well then add in butter, greek yogurt + hemp milk. mash + mix well 4. season with salt + pepper. garnish with green onions
